  • 400 g tomatoes halved
  • 3 cloves garlic left whole
  • 1 tsp chili flakes
  • 1 tsp oregano dried
  • 4 tbsp olive oil
  • 1 tin cannellini beans drained
  • 60 ml white wine
  • 1 block feta cheese halved
  • 2 tbsp parsley finely chopped
  • fresh bread to serve

Cooking Instructions

  • Preheat the oven to 180°C fan. Place the halved tomatoes and whole garlic cloves in a roasting pan.
  • Add chili flakes, oregano, and olive oil to the pan. Toss gently to coat.
  • Roast the tomatoes and garlic for 15 minutes until softened and slightly caramelized.
  • Remove the pan from the oven and add the drained cannellini beans and white wine. Stir gently to combine.
  • Place the halved feta blocks on top of the tomato and bean mixture.
  • Return to the oven and bake for another 15 minutes until the feta begins to turn golden and softens.
  • Remove from the oven and sprinkle with finely chopped parsley and an extra drizzle of olive oil.
  • Serve immediately with slices of fresh crusty bread to soak up the sauce.

  • Use the ripest tomatoes available for maximum flavor.
