- Preheat the oven to 180°C fan. Place the halved tomatoes and whole garlic cloves in a roasting pan.
- Add chili flakes, oregano, and olive oil to the pan. Toss gently to coat.
- Roast the tomatoes and garlic for 15 minutes until softened and slightly caramelized.
- Remove the pan from the oven and add the drained cannellini beans and white wine. Stir gently to combine.
- Place the halved feta blocks on top of the tomato and bean mixture.
- Return to the oven and bake for another 15 minutes until the feta begins to turn golden and softens.
- Remove from the oven and sprinkle with finely chopped parsley and an extra drizzle of olive oil.
- Serve immediately with slices of fresh crusty bread to soak up the sauce.

- Use the ripest tomatoes available for maximum flavor.
- Do not overbake the feta to keep it creamy.
