  • 1 lb hot sausage uncooked
  • 8 oz cream cheese softened
  • 1.5 cups baking mix such as Bisquick
  • 1.5 cups shredded cheddar cheese
  • 4 cups frozen shredded hash brown potatoes do not thaw

Preparation and Baking

  • Preheat the oven to 400°F (200°C). Prepare a rimmed baking sheet by lining it with parchment paper or lightly greasing it.
  • In a large bowl or using a stand mixer with a dough hook, combine the uncooked hot sausage, softened cream cheese, baking mix, shredded cheddar cheese, and frozen shredded hash browns. Mix until the ingredients are well incorporated and form a thick mixture.
  • Shape the mixture into 1½-inch balls, using your hands or a small scoop for uniform size. Arrange the balls on the prepared baking sheet, spacing them about an inch apart.
  • Bake in the preheated oven for 18 to 22 minutes, or until the bites are golden brown and cooked through. The sausage should reach an internal temperature of 160°F (71°C).
