- Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions.

- Gradually pour in small splashes of reserved pasta water while stirring until a glossy, creamy sauce coats the spaghetti.
- Taste and adjust seasoning if needed. Add more pasta water if the sauce feels too thick.
- Plate the pasta and top with crumbled feta, crisp spring onions, and fresh coriander leaves.
