Creamy Mushroom and Swiss Chard Curry Recipe
This nourishing autumn curry combines mixed mushrooms and Swiss chard in a creamy coconut sauce with warm spices. It's a comforting dish that's easy to prepare and serves two. Perfect for a cozy dinner, and you can add protein like chicken or tempeh.
- 8 ounces mixed mushrooms
- 1 bunch Swiss chard or spinach
- 1 onion
- 2 cloves garlic
- 1 piece ginger thumb-sized
- 1 tbsp ghee or coconut oil
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp smoked paprika
- pinch cinnamon
- 2 tbsp tomato paste
- 3/4 cup coconut milk
- 1/2 cup water or bone broth
- 1 tsp lime juice
- to taste sea salt
- to taste black pepper
- 1 tsp honey
Sauté onion until soft in ghee or coconut oil.
Add garlic and ginger and sauté briefly.
Add all spices and let them bloom for 30 seconds.
Add mushrooms and chopped chard stems. Cook until soft.
Add tomato paste, coconut milk, honey, and water or broth. Simmer for 10 minutes.
Add chopped chard leaves and lime juice.
Season to taste with salt and pepper.
