In a small bowl, mix sour cream with horseradish sauce until smooth. Spread evenly over each pita bread.
Heat oil in a skillet over medium heat. Add chopped turkey and sauté for 3–4 minutes until warmed and lightly golden. Remove from heat.
Layer the sautéed turkey on top of the sauce-covered pita. Add red onion, cucumber, bell pepper, tomato slices, shredded cheese, and spinach.
Roll each pita tightly to form a wrap.
Preheat a grill or panini press to 450°F. Place wraps on the grill, close lid, and cook for 3 minutes or until golden and crisp.
Slice in half if desired and serve immediately while warm.
