Easy Wafer Roll with Pistachio and Cranberry Filling

Description

This elegant wafer roll features a creamy white chocolate and margarine filling studded with toasted almonds, coconut, chopped pistachios, and cranberries. A softened mikado wafer sheet is spread with the warm mixture, rolled up, chilled until firm, then sliced into pretty rings. It is a simple yet impressive dessert that is perfect for gatherings and tea time.

Ingredients

For the Filling

  • ⅓ cup + 1 tablespoon water
  • ⅓ cup granulated sugar
  • 1 packet vanilla sugar
  • ½ cup + 1 tablespoon margarine chopped
  • 3½ ounces white chocolate broken into pieces
  • 1 cup crushed biscuits
  • 1 cup toasted almonds ground
  • ½ cup desiccated coconut
  • ⅓ cup pistachios chopped
  • ½ cup dried cranberries chopped

Other Ingredients

  • 1 sheet mikado wafer

Instructions

Preparing the Wafer

  • Dampen a clean kitchen towel slightly and wring out any excess water.
  • Wrap the wafer sheet inside the towel and set aside for 15 to 20 minutes until it becomes soft and pliable. Be careful not to over-soak it.

Making the Filling

  • Place water, sugar, and vanilla sugar in a saucepan.
  • Add the chopped margarine and broken white chocolate pieces.
  • Over medium-high heat, stir constantly until everything melts and the mixture is smooth.
  • Once it comes to a boil, cook for 1 to 2 minutes, then remove from heat.
  • While the mixture is still hot, stir in the crushed biscuits, ground toasted almonds, and coconut until well combined.
  • Finally, fold in the chopped pistachios and cranberries.
  • Let the filling cool for about 5 minutes before using.

Rolling and Chilling

  • Place the softened wafer with its raised side facing up.
  • Spread the warm filling evenly across the entire surface of the wafer.
  • Apply a thinner layer of filling at the far edge so it does not squeeze out when rolling.
  • Carefully roll up the wafer. Let it rest at room temperature first so the wafer dries slightly.
  • Then place the roll in the refrigerator until completely cool and firm.
  • Once chilled, use a sharp thin knife to cut the roll into thin ring-shaped slices.

Notes

  • Do not let the wafer soak for too long or it may become fragile and fall apart.
  • Serve chilled for the best texture and clean, even slices.
