How to Make Flourless Oatmeal Kefir Bread
  1. Preheat the oven to 350°F (175°C). Lightly grease a standard loaf pan with olive oil or non-stick spray.
  2. Pulse the rolled oats in a food processor or blender until they reach a flour-like consistency.
  3. In a large mixing bowl, combine the processed oat flour, salt, baking powder, and baking soda. Mix well.
  4. Add the kefir, eggs, and apple cider vinegar to the dry ingredients. Stir until fully combined. The batter should be thick and uniform.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 30–35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let the bread cool in the pan for 10 minutes. Transfer to a wire rack to cool completely before slicing.
