  • 1 medium sweet potato baked or microwaved until soft
  • 4 cups ground turkey
  • 1 can diced tomatoes optional, for added moisture
  • 1/2 medium yellow onion chopped
  • 3-4 handfuls fresh spinach leaves
  • 1/3 cup grated Parmesan cheese
  • to taste shredded cheddar cheese
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • 2 tbsp butter divided
  • to taste salt
  • to taste black pepper
  • to taste garlic powder
  • to taste garlic salt
  • to taste red pepper flakes
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • to taste fresh chives chopped for garnish
  • 1-2 tbsp sour cream optional topping

Method
 

Prepare Sweet Potato Base
  1. Preheat oven to 400°F (200°C). Bake sweet potato for 30 minutes or microwave for 6-7 minutes until tender. Allow to cool slightly, then cut in half and scoop out the flesh into a bowl.
  2. Mash the sweet potato flesh with a fork, adding a small amount of butter, salt, and pepper. Set aside.
Prepare Turkey and Spinach Filling
  1. In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat. Add ground turkey, season with salt, pepper, and garlic powder, and cook until browned.
  2. Add Worcestershire sauce and stir to combine. Once cooked, remove turkey from the skillet and set aside.
  3. Add chopped onions and remaining 1 tbsp butter to the skillet and sauté for 2-3 minutes until softened. Stir in spinach until wilted, adding a drizzle of olive oil if needed.
  4. Return the cooked turkey to the skillet. Sprinkle in paprika, oregano, basil, garlic salt, and Parmesan cheese. Mix well and simmer for 3 minutes.
Assemble and Bake
  1. Preheat oven to 420°F (215°C). Spread a layer of mashed sweet potato inside each hollowed potato half.
  2. Top with a generous portion of the turkey and spinach mixture, then sprinkle shredded cheddar cheese and a pinch of garlic salt on top.
  3. Bake for 8-10 minutes until the cheese is melted and slightly golden. Remove from oven and garnish with fresh chives and a dollop of sour cream.

Notes

  • You can bake sweet potatoes in advance and refrigerate until ready to use.
  • Use freshly grated cheese for best melt and flavor.
