  • to taste fresh chives chopped for garnish
  • 1-2 tbsp sour cream optional topping

Instructions

Prepare Sweet Potato Base

  • Preheat oven to 400°F (200°C). Bake sweet potato for 30 minutes or microwave for 6-7 minutes until tender. Allow to cool slightly, then cut in half and scoop out the flesh into a bowl.
  • Mash the sweet potato flesh with a fork, adding a small amount of butter, salt, and pepper. Set aside.

Prepare Turkey and Spinach Filling

  • In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat. Add ground turkey, season with salt, pepper, and garlic powder, and cook until browned.
  • Add Worcestershire sauce and stir to combine. Once cooked, remove turkey from the skillet and set aside.
  • Add chopped onions and remaining 1 tbsp butter to the skillet and sauté for 2-3 minutes until softened. Stir in spinach until wilted, adding a drizzle of olive oil if needed.
  • Return the cooked turkey to the skillet. Sprinkle in paprika, oregano, basil, garlic salt, and Parmesan cheese. Mix well and simmer for 3 minutes.

Assemble and Bake

  • Preheat oven to 420°F (215°C). Spread a layer of mashed sweet potato inside each hollowed potato half.
  • Top with a generous portion of the turkey and spinach mixture, then sprinkle shredded cheddar cheese and a pinch of garlic salt on top.
  • Bake for 8-10 minutes until the cheese is melted and slightly golden. Remove from oven and garnish with fresh chives and a dollop of sour cream.

Notes

  • You can bake sweet potatoes in advance and refrigerate until ready to use.
