Keto White Chocolate Blondies
These keto-friendly white chocolate blondies are soft, gooey, and low-carb, perfect for a sugar-free dessert. Made with almond flour, monk fruit sweetener, and white chocolate, they are flourless, gluten-free, and quick to bake, making them ideal for keto diets or anyone craving a rich, indulgent treat without the sugar.
Blondie Batter
- 1/4 cup olive oil or melted butter for richer flavor
- 1 cup white chocolate chips sugar-free, like Lily's
- 2 tbsp almond flour
- 1/4 tsp baking soda
- 2 large eggs room temperature recommended
- 3/4 cup granulated monk fruit sweetener
Optional Topping
- 1/3 cup white chocolate for optional topping, melted
Baking Instructions
Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring until smooth.
Stir in the olive oil and eggs until fully combined.
Fold in almond flour, baking soda, and monk fruit sweetener until a smooth, thick batter forms.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 20–25 minutes until the edges are set and the center is slightly soft.
Allow the blondies to cool completely for at least 15 minutes before slicing.
Optional: Drizzle melted white chocolate over the top once cooled.
