Preparation Steps
- Preheat the oven to 400°F (200°C).
- Slice each chicken breast lengthwise to create a pocket, leaving about half an inch uncut.
- Layer thin apple slices inside each pocket, followed by brie slices.
- Gently close the chicken and place into a cast iron pan or oven-safe dish.
- In a bowl, mix maple syrup, Dijon mustard, and minced garlic until combined.
- Season chicken with salt, then drizzle with some of the maple mixture. Add fresh thyme on top.
- Bake for 25 minutes, or until chicken reaches 165°F internally.
- Broil for 3–4 minutes to caramelize the top.
- Remove from the oven, let rest 5 minutes, drizzle with reserved glaze, and garnish with thyme.
Notes
- Use firm apple varieties such as Honeycrisp or Pink Lady for best results.
- Do not overstuff the chicken or the filling may leak out during baking.
- Always allow chicken to rest for 5 minutes before slicing to retain juices.
