- 1 apple thinly sliced, Honeycrisp or Gala recommended
- 4 slices brie cheese double-cream preferred
- 1 tbsp garlic minced
- 3/4 cup maple syrup pure maple syrup
- 1 tbsp Dijon mustard

Preparation Steps
Preheat the oven to 400°F (200°C).
Slice each chicken breast lengthwise to create a pocket, leaving about half an inch uncut.
Layer thin apple slices inside each pocket, followed by brie slices.
Gently close the chicken and place into a cast iron pan or oven-safe dish.
In a bowl, mix maple syrup, Dijon mustard, and minced garlic until combined.
Season chicken with salt, then drizzle with some of the maple mixture. Add fresh thyme on top.
Bake for 25 minutes, or until chicken reaches 165°F internally.
Broil for 3–4 minutes to caramelize the top.
Remove from the oven, let rest 5 minutes, drizzle with reserved glaze, and garnish with thyme.
- Use firm apple varieties such as Honeycrisp or Pink Lady for best results.
- Do not overstuff the chicken or the filling may leak out during baking.
- Always allow chicken to rest for 5 minutes before slicing to retain juices.
