  • 2 chicken breasts boneless, skinless
  • 1 apple thinly sliced, Honeycrisp or Gala recommended
  • 4 slices brie cheese double-cream preferred
  • 1 tbsp garlic minced
  • 3/4 cup maple syrup pure maple syrup
  • 1 tbsp Dijon mustard
  • fresh thyme plus extra for garnish
  • salt to taste

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • Slice each chicken breast lengthwise to create a pocket, leaving about half an inch uncut.
  • Layer thin apple slices inside each pocket, followed by brie slices.
  • Gently close the chicken and place into a cast iron pan or oven-safe dish.
  • In a bowl, mix maple syrup, Dijon mustard, and minced garlic until combined.
  • Season chicken with salt, then drizzle with some of the maple mixture. Add fresh thyme on top.
  • Bake for 25 minutes, or until chicken reaches 165°F internally.
  • Broil for 3–4 minutes to caramelize the top.
  • Remove from the oven, let rest 5 minutes, drizzle with reserved glaze, and garnish with thyme.

Notes

  • Use firm apple varieties such as Honeycrisp or Pink Lady for best results.
  • Do not overstuff the chicken or the filling may leak out during baking.
  • Always allow chicken to rest for 5 minutes before slicing to retain juices.
