  • 1.5 pounds lean ground beef
  • 1 large onion chopped
  • 1 green bell pepper chopped small
  • 0.5 cup whole milk
  • 0.5 cup mushrooms chopped, optional
  • 1 tablespoon olive oil
  • 1 cup breadcrumbs Italian style, regular or panko
  • 1 large egg
  • 0.5 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon adobo seasoning
  • 3 tablespoons Worcestershire sauce
  • 8 slices mozzarella or provolone cheese thick cut

Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onions and bell peppers until tender.
  3. In a large mixing bowl, combine the ground beef, sautéed vegetables, milk, chopped mushrooms (if using), breadcrumbs, egg, salt, pepper, garlic powder, onion powder, adobo seasoning, and Worcestershire sauce. Mix with your hands until fully incorporated.
  4. Lightly grease a loaf pan. Press half of the meat mixture into the bottom of the pan.
  5. Layer 4 slices of cheese over the meat mixture in the pan.
  6. Add the remaining meat mixture over the cheese layer and press gently to even out.
  7. Bake in the preheated oven for 30 minutes.
  8. Remove from the oven and top with the remaining 4 cheese slices. Return to oven and bake for another 10–15 minutes, or until the cheese is melted and slightly golden.
  9. Allow the meatloaf to rest for about 10 minutes before slicing and serving.

Notes

  • You can swap mozzarella for provolone or even white cheddar for a stronger flavor.
  • Skip mushrooms if you prefer a simpler texture, or replace them with extra bell peppers.
  • Use a meat thermometer to ensure the loaf reaches an internal temperature of 160°F.
  • Letting it rest after baking helps set the cheese and makes slicing easier.
