Ingredients
- 1 tablespoon olive oil divided
- 1 sweet onion chopped
- 1 orange bell pepper chopped
- 1 pound shrimp raw, peeled, and deveined
- 1 lime juice and zest
- 1-2 cloves garlic minced
- 1 tablespoon taco seasoning
- 1 cup mozzarella cheese shredded
- ¼ cup fresh parsley finely chopped
Main Instructions
Heat 1 teaspoon of olive oil in a medium frying pan over medium heat. Add the chopped onion and pepper. Sauté the vegetables for 3 to 4 minutes.
Stir in the raw shrimp, lime zest and juice, garlic, and taco seasoning. Cook the vegetable mixture for 4 minutes.
Remove the pan from heat and set cooked ingredients aside on a plate. Wipe the pan clean with a paper towel and replace over medium-low heat.
Divide the cooked shrimp, vegetables, shredded cheese, and fresh parsley atop 4 flour tortillas. Fold each tortilla in half.
Cook the folded tortillas in the heated pan with the remainder of the oil for 1 to 2 minutes per side until the cheese has melted.
