Ingredients
  

Roasted Sweet Potatoes
  • 2 medium sweet potatoes peeled and cut into fries
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • to taste salt and black pepper
Guacamole
  • 2 ripe avocados
  • 2 tbsp red onion finely chopped
  • 1 tbsp fresh coriander chopped
  • 1 small chilli finely minced
  • 1 tbsp lime juice
  • to taste salt and black pepper
Spicy Mayo
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha adjust to taste
Assembly
  • 1/2 cup feta cheese crumbled
  • 4 pieces flatbreads soft, whole wheat or naan

Method
 

Roasting Sweet Potatoes
  1. Preheat the oven to 425°F (220°C). Toss the sweet potato fries with olive oil, smoked paprika, salt, and pepper.
  2. Spread the fries on a baking tray in a single layer and roast for 20-25 minutes, flipping halfway through, until crisp and golden.
Preparing Guacamole
  1. Mash the avocados in a bowl, leaving some chunks. Mix in red onion, coriander, chilli, lime juice, salt, and pepper until combined.
Making Spicy Mayo
  1. Combine mayonnaise and sriracha in a small bowl. Adjust the heat by adding more sriracha if desired.
Assembling the Flatbreads
  1. Warm the flatbreads briefly in a skillet or oven. Spread a layer of guacamole on each flatbread.
  2. Top with roasted sweet potatoes and sprinkle crumbled feta on top.
  3. Drizzle with spicy mayo and garnish with extra coriander or chili if desired. Serve immediately.

  • Use firm, evenly cut sweet potato fries for uniform roasting.
  • Assemble flatbreads just before serving to retain contrast between warm potatoes and fresh guacamole.
