  • 2 whole corn on the cob fresh or frozen
  • 1 tablespoon butter softened
  • 1 handful feta cheese crumbled
  • 1 handful fresh coriander leaves roughly chopped
  • 1/2 lime lime juice freshly squeezed
  • to taste chilli oil for drizzling
  • 1 teaspoon salt for boiling water

Method
 

Cooking Instructions
  1. Fill a large pot with water, add salt, and bring it to a boil over high heat.
  2. Add the corn cobs and cook for about 5 minutes until bright yellow and tender.
  3. Remove the corn from the water and place on serving plates. Let cool slightly for a minute or two.
  4. Rub softened butter evenly over each cob while still warm, allowing it to melt into the kernels.
  5. Crumble feta cheese generously over the buttered corn.
  6. Sprinkle chopped coriander leaves and squeeze fresh lime juice over the top.
  7. Finish with a drizzle of chilli oil to taste. Serve immediately while warm.

  • For extra flavor, try grilling the corn briefly after boiling for a light smoky char.
