Ingredients

Chicken Marinade

  • 4 pieces chicken breasts skinless, boneless
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp ground turmeric
  • 1 tsp onion granules
  • 1 piece lemon juiced
  • to taste salt and black pepper

Couscous Salad

  • 150 g couscous pearl couscous preferred
  • 1 tbsp ground turmeric
  • 150 ml chicken stock hot
  • 50 g sun-dried tomatoes chopped
  • 1 tbsp sultanas
  • ½ piece cucumber chopped
  • 2 tbsp pomegranate seeds
  • 1 tbsp balsamic vinegar
  • 30 g fresh basil chopped

Optional Side Salad

  • 1 cup Arabic salad tomato, cucumber, onion, parsley, olive oil, lemon juice

Instructions

Cooking Chicken

  • Preheat the air fryer to 200°C.
  • In a bowl, combine chicken breasts with olive oil, minced garlic, cumin, paprika, oregano, turmeric, onion granules, lemon juice, salt, and pepper. Mix thoroughly.
  • Place the marinated chicken in the air fryer and cook for 15-17 minutes until fully cooked.

Preparing Couscous Salad

  • While the chicken cooks, bring chicken stock to a simmer and stir in turmeric.
  • Add couscous to the stock, cover, and let it absorb the liquid for a few minutes.
  • Fluff the couscous with a fork and fold in sun-dried tomatoes, sultanas, cucumber, pomegranate seeds, balsamic vinegar, and fresh basil.

Assembling the Meal

  • Slice the cooked chicken and serve on top of the couscous salad.
  • Optionally, serve with Arabic salad on the side for extra freshness and crunch.

Notes

  • Store chicken separately from couscous and salad to maintain texture.
