Whipped Feta
- 1 cup ricotta cheese
- 4 oz feta cheese crumbled
- 3 tablespoon olive oil
Bread
- 1 loaf sourdough bread
- 1 cloves garlic whole, peeled
- olive oil for drizzling
Toppings
- 1 cup cherry heirloom tomatoes chopped
- 2 tablespoon chives chopped
- 1/4 cup pine nuts toasted
- 2 tablespoon honey
- salt to taste
Combine the ricotta cheese, crumbled feta, and olive oil in a food processor. Blend until completely smooth, then set aside.
Slice the sourdough bread into thin slices and arrange them on a baking sheet.
Drizzle the bread slices with olive oil and rub a peeled garlic clove over each piece.
Bake in a preheated oven at 400°F for about 10 minutes, until the edges are golden brown.
While the bread cools slightly, prepare the toppings: chop the tomatoes and chives, and toast the pine nuts in a dry pan over medium heat until golden.
Spread the whipped feta mixture generously on each crostini.
Top each crostini with tomatoes, chives, toasted pine nuts, and a pinch of salt, then drizzle honey over the top.
Serve and enjoy!
- For even more flavor, drizzle a little extra olive oil over the whipped feta before serving.
- These crostini are best assembled just before serving so the bread stays crisp.
